Eggplant Rollatini

Rollatinis' are an extension of our love for eggplant Parmigiana. Thinly sliced eggplant prepared as for parmigiana but each slice is filled with ricotta, mozzarella and seasonings then rolled and baked in our special tomato sauce. They can be served as an appetizer, a side dish with meat or pasta, maybe just grab one when you feel hungry.
